Quinoa? Huh?! That was what I said a few months ago when I was reading over The Eat Clean Diet shopping list. I had no clue what that funny word was. Was it a grain? Bean? Of course they didn't have it here at our base commissary, so I was pleasantly surprised when I saw it at one of the grocery stores off base. That was a few months ago and I just now decided to find a recipe for it. Since I have become a Flexitarian, I thought it was time to give it a try.
I came across the recipe Quinoa Chard Pilaf on the website Allrecipes.com. The Hubster was apprehensive as usual. He thinks all vegetarian/vegan food is yucky. But I have proven him wrong time and time again since switching over last month. I substituted the lentils and the mushrooms for red kidney beans and half a can of cream of celery. For the heck of it I threw in some radishes.
This was this week's Family Farm Fresh delivery! Now that The Hubster has gotten me a juicer, I'm seeing that my veggies are going to go quicker!
This is quinoa. Really small grains. I just finished rinsing them in a fine mesh colander.
Finished product! As you can see, the quinoa becomes translucent some and actually expands into spirals.
Mmmm! I complimented my Quinoa Chard Pilaf with a salad. I am a sucker for Caesar dressing with a dash or two of cayenne pepper!. Dinner was delish!
